Widely recognized for redefining the identity of Cahors, he focuses on producing fresh, vibrant, and parcels driven expressions of Malbec that move beyond the region’s traditional power driven style. Working on high altitude limestone plateaus and clay limestone slopes, Fabien Jouves benefits from cooler conditions than the valley floor, allowing for slower ripening and greater aromatic precision. His vineyards are certified organic and biodynamic, with a strong emphasis on biodiversity, living soils, and minimal intervention. Specializing in Malbec (Côt), alongside small parcels of indigenous and experimental varietals, Fabien Jouves crafts wines that are energetic, pure, and expressive. His vineyard philosophy prioritizes low yields, manual harvesting, and a deep respect for natural cycles to preserve balance and freshness. In the cellar, he follows a creative approach, using native yeast fermentations, gentle extraction, and minimal sulphur additions.
